Spring is just around the corner and I absolutely adore this lemon poppyseed cake recipe. We always have a bunch of lemons at our house and once they are near their last leg, I like to incorporate their juice and zest into desserts or dressings. This one just so happens to be a delicious cake! Ever since I was a kid I always loved lemon poppyseed, maybe because I was obsessed with the Starbucks Lemon Cake or the Portillo's lemon poppyseed muffins I would get on the side of my chopped salad or roast beef sandwich!
I love to top cakes with fresh flowers and citrus, gives it such a beautiful and elegant look!
This recipe uses lemon extract, which if in a pinch you can use fresh lemon juice. As well as lemon zest to give this cake a nice and bright flavor.
The lemon curd is also to die for! You can use this recipe for other desserts as well, for other cake recipes, cookies or lemon bars!
I think it pairs so nicely with this cake, giving it a boost of lemon flavor, creamy and richness to the center when you get that extra punch of lemon!
