This recipe is super simple and can be used for a variety of pastries like danishes, hand pies, regular pies, quiches or tarts. I personally love using it for vegetable tarts by adding a cheesy base or pesto and loading it with veggies to roast in the oven while baking, finished off with some good olive oil and flaky salt.
The key to a good puff pastry is keeping the butter/dough as cold as possible so it will melt in the oven to create steam and flaky air pockets inside the crust!
